My people love a hot breakfast. There really is nothing like waking up on a cold morning to the smells of warm, creamy cinnamon oatmeal wafting out from the kitchen. This recipe is SO easy to make, it feeds a small army, and it is the perfect base recipe for all the fun oatmeal toppings! We all have a favorite variation of this recipe- some of my kids love it with chocolate chips and coconut, another enjoys all the dried fruit with toasted nuts, and I just love to keep it simple with a light dusting of the cinnamon sugar.

Ingredients for creamy cinnamon oatmeal

To make this oatmeal, you will need:

  • 4 heaping cups of old fashioned oats
  • 8 cups whole milk
  • 6 cups water
  • 1/2 heaping cup of brown sugar
  • 1 1/2 tsp pure vanilla extract
  • 1 tsp salt
  • 4 tsp ground cinnamon

To begin, add your old fashioned oats, milk, and water to a medium sized stock pot over medium heat. Let the mixture come to a boil, then turn the heat down to a simmer.

Once the oatmeal is simmering, add in the cinnamon, vanilla, salt, and brown sugar. Allow it to simmer 10-20 minutes, or until the oats have absorbed a lot of the liquid and have thickened into a porridge.

Once the oatmeal is ready, remove it from the heat and pour into individual bowls. Add whichever toppings you like and serve warm! Enjoy!

faq and substitutions for creamy cinnamon oatmeal

Can i substitute a non dairy milk substitute? Yes! I love to use vanilla almond milk in place of the whole milk. Or you can use coconut, soy, or hemp milk. Any will do!

Can I substitute a different sweetener for the brown sugar? Yes. You can substitute honey or maple syrup in 1 to 1 ratios for the sugar. Or if you don’t have those, you can also use table sugar but you will sacrifice some of the “carmalized” flavor.

How do I get my oatmeal to be creamy? The best way to get creamy oatmeal is to make sure that your liquid to oat ratio is high enough. Also, because this oatmeal uses both milk and water, you get the benefits of the milk making the oats thick and creamy, but thinned by the addition of the water. This results in the perfect thickness and amount of liquid in the final bowl of oatmeal.
