This delicious little puff pastry fresh strawberry tart is a throw back to the old days of toaster strudels! The puff pastry has a delicious flaky, buttery flavor, and the strawberry jam adds the perfect sweet and tart contrast. Add the freshly sliced strawberries and homemade icing sugar and woah! They are a level up. They are also beautiful and so simple to make. Plus they can be whipped up in less than twenty minutes!

Ingredients for puff pastry fresh strawberry tarts
With only a whopping SIX ingredients, these beauties can be whipped up in no time! You just need:
- 1 Puff Pastry Sheet
- 12 Tbsp Strawberry Jam, seedless
- 8 oz Fresh Strawberries
- 1 Cup Confectioner’s Sugar
- 3-4 Tbsp Heavy Cream
- 1 tsp pure vanilla extract

To make puff pastry fresh strawberry tarts
Step 1: Prep the puff pastry
To start, spread a layer of parchment paper onto a baking sheet. Allow the puff pastry to thaw until it can be easily unfolded- maybe 15- 30 minutes, but no longer than 40. Then, carefully cut the puff pastry into six- four inch rectangles, using the folds as guidelines. Next, using a pairing knife, carefully score at 1/4 inch all around the edges and prick the centers with a fork.



Step 2: Bake the Puff Pastry
Put the prepped puff pastries into the oven for 10- 12 minutes, or until they are slightly golden and puffed. Then remove them from the oven and using the back of a fork, press down the centers of each pastry to create a shallow dip in the center.


Step 3: Fill the centers with Jam
Carefully spoon out 1-2 Tbsp of Jam into the center of each puff pastry. Gently spread the jam around to cover the bottom. Then, place the puff pastries back into the oven for 2-3 minutes, or until the jam is melted. Watch carefully so that the sugar does not burn!

Step 4: Add fresh strawberries
Wash and slice the fresh strawberries. Arrange the sliced strawberries onto the pastries, covering the jam centers. Don’t be stingy.



Step 5: Drizzle with icing
In a small bowl, mix together 1 Cup of Confectioner’s sugar with 3-4 Tbsp of the heavy cream and 1 tsp of pure vanilla extract. Start slowly, adding only a couple tablespoons at a time. If the icing is too thick to drizzle, add more heavy cream slowly until it reaches a thinner consistency. Once the consistency is right, use a spoon to carefully drizzle icing sugar over each pastry. Serve immediately.

Can I substitute other jams? Yes! This is also delicious with seedless raspberry jam and fresh raspberries.
Are Puff Pastry and Phyllo dough the same thing? No. Phyllo dough will not work for this recipe. Although Phyllo and Puff are both laminated doughs, Phyllo is much thinner and crisper, while puff is airy and light and more pastry-like.
Can I substitute non-dairy milk for the heavy cream? Yes! You can use any milk substitute for the icing sugar. Just add one Tbsp at a time to make sure the consistency isn’t too thin. Because of the differences in consistency, the amount of liquid needed may vary.
