What are blondies?

Simply put, blondies are brownies made without blending the chocolate into the mix. The chocolate and other toppings are added before baking, un-melted, so that they stay separate while baking. I actually prefer these to typical chocolate brownies because flavor wise they are something between a brownie and a chocolate chip cookie. I have never met a brownie I didn’t like, but these are the best blondies with toasted pecans!

These brownies have a super simple ingredient list, which is part of what makes them so easy to make. I almost always have what I need in the pantry to whip these up at a moment’s notice…which is dangerous!

  • 1 1/2 Cups self- rising flour
  • 2 Cups tightly packed brown sugar
  • 1 Cup pecans
  • 3 large eggs
  • 1 1/2 sticks melted butter (or 3/4 Cup) + 1 Tbsp butter for toasting the pecans
  • 1 Cup semi sweet chocolate chips

Substitutions

If you aren’t crazy about chocolate chips or have nut allergies, you can easily omit or substitute ingredients to adapt these brownies for your own preferences.

Instead of chocolate chips, you might try:

  • butterscotch chips
  • white chocolate chips
  • chopped chocolate candy (like Reeses!)
  • M&M’s

Instead of Pecans, you might try:

  • Rice Krispies
  • shredded coconut
  • pumpkin or sunflower seeds
  • raisins or craisins

Blondies are super easy to throw together and can be whipped up in a matter of minutes. First, simply cream together the melted butter and brown sugar. Let the butter cool for a few minutes. Then, in a separate bowl, beat your eggs really good so that they are light and fluffy. Then add the eggs to the brown sugar mix.

Next, Add in the flour and mix until it is all incorporated. Then, pour it into a parchment lined 9 X 13 baking pan. Now this is the fun part. Melt the 1 Tbsp of butter in a skillet on medium low heat. Chop the pecans to your preferred size then add then to the butter and let them cook for 2-3 minutes. Watch carefully to make sure they don’t burn. When they have developed some color and smell fragrant, they are done.

Once the pecans are toasted, add half the chocolate chips to the pan. Using a spoon, lightly stir in the chocolate chips. Then add the rest of the chocolate chips and the toasted pecans to the top of the brownies and pop into the preheated oven for 30 minutes to bake.

Can I substitute use a butter substitute? Yes! You can use oil or shortening instead of butter.

Can I adapt these to be egg free? Yes, but the texture will be slightly different. To adapt these to be egg free, use 3/4 cup of applesauce or canned pumpkin puree and add 1/2 tsp of baking powder to the flour before mixing in.

Can I freeze these? Yes! These brownies can be made ahead and frozen in the pan for up to three months.

Can I make these ahead? Yes! These brownies can be made ahead and stored at room temperature for 3- 4 days or up to a week in the fridge.

  • 1 1/2 Cups melted salted butter

  • 1 Tbsp butter for toasting pecans
  • 1 Cup semi sweet chocolate chips

Instructions
