This easy, make ahead breakfast is a regular staple at our house and is so versatile you can make it over and over again with new exciting flavors and ingredients. Our favorite variation is with breakfast sausage and lots and lots of veggies. Oh, and can't forget the hot sauce.
Mix together all ingredients in a 9x13 baking dish. Add drained sausage.
Cover with foil and refrigerate until ready to bake.
Preheat oven to 375 and bake covered for 30 minutes. Take off foil, bake additional 30 minutes. Serve topped with extra cheese, sour cream, avocado and hot sauce.
