what is a mocktail spritzer?

This raspberry lemonade “mocktail” spritzer is a non-alcoholic refreshing beverage that tastes crisp and slightly sweet- similar to a cocktail, but family friendly. I loved drinking mocktails while I was pregnant, so I always serve these at baby showers or to nursing mothers. And my kids also really enjoy the experience of a good mocktail at special occasions- it encourages them feel like they are totally in on the fun.

Ingredients for raspberry lemonade mocktail spritzers

You can make these fun mocktails with only a few simple ingredients! What you’ll need:

  • 32 oz raspberry lemonade
  • 2 Cups Hot water
  • 3/4 Cup pure honey
  • 20 oz of Club Soda
  • 13 sprigs of rosemary
  • 16 fresh raspberries
  • 1/2 fresh lemon to garnish

First, dissolve the 3/4 Cup of honey in 2 Cups of Hot water. Using the back of a spoon or fork, crush 4-5 whole raspberries and stir them into the honey water. Then, add 4-5 long sprigs of rosemary. Let it cool to room temperature, then let it continue to steep in the fridge overnight.

After the honey-rosemary simple syrup has steeped overnight, you are ready to make your mocktail! Pour 32 oz of raspberry lemonade into a large bowl or pitcher. Then, strain the honey-rosemary simple syrup and add it to the raspberry lemonade. Finally, add the Club soda. Stir briskly with a spoon.

Assembling your raspberry lemonade spritzer

To assemble your raspberry lemonade mocktail spritzer, drop a couple fresh raspberries into the bottom of your glass and then add ice to fill. Pour the raspberry lemonade over the ice and garnish with a short sprig of rosemary and a slice of fresh lemon. Ta-da! Ready to serve! If you want to get really fancy, you can dip the lip of the glass into the spritzer and then dip it into a small bowl of raw sugar to coat the edge of the glass.

FAQ & substitutions

Can I replace the honey with another sweetener? This drink DOES have a distinct honey flavor so if you don’t like that, replace the honey with pure maple syrup, or 3/4 Cup of Table Sugar

What can I use in place of Club Soda? If you don’t have Club soda, you can substitute Ginger Ale or Sprite for the Club Soda, but I would reduce the sweetener (honey or sugar) by 1/4 to 1/2 since those already have added sugars.

Do I have to refrigerate overnight? Yes. In order for the homemade simple syrup to develop enough flavor, the syrup does have to steep overnight.

Can I make these ahead? Unfortunately, the only part that can be made ahead is the simple syrup. Since these use carbonated beverages like Club Soda or Ginger Ale, if you make them ahead they will loose their “fizz”.

  • 32 oz raspberry lemonade
